Reading from Hovhaness book and creating an Armenian Holiday dish

Eggplant with cheese
1 – Medium eggplant
1 – Cup graded cheese
1 – Egg
Slices of Tomatoes
Butter
Chopped Parsley
Salt and pepper
Mix cheese, egg, parsley and salt together. Wash and slice eggplant into round slices 1/4″ thick. Arrange eggplant slices in a buttered pan, put some cheese mixture over it, then a dab of butter, then a slice of tomato. Do the same with all eggplant. Bake in slow (300o) oven until eggplant is tender, about 1 hour.
